Chocolate Brownies with Salted Caramel Icing (Allergy-Friendly)

How can one not love gooey, fudgey brownies? Add salted caramel to the mix, and said brownies become irresistible! As much as I love the everything salted caramel craze, these brownies were not intentionally made to become salted caramel brownies, but a magical accident happened (baking accidents are the best) and the type of sugar, vanilla and other icing ingredients transformed into caramel and voila! — Chocolate Brownies with Salted Caramel Icing were created.

Unlike sticky caramel that gets stuck in your teeth, this caramel icing is light and soft yet sweet and buttery. Dusted with a sprinkle of pink Himalayan salt, and the salty sweet perfection melds into the chocolate brownie layers. When drizzled on top of the brownie cake fresh from the oven, the salted caramel icing is able to melt into the hot brownie and mix with the chocolate chips to create a chocolate caramel swirl. Chocolate, caramel, and pink salt — the three ingreidnets to happiness.

While brownies are not exactly the epitome of health food, these brownies are somewhat better for you than the traditional brownie. They are made with plant-based and mostly unrefined ingredients. They actually happen to be grain-free, gluten-free, dairy-free, egg-free and nut-free. That’s a lot of allergies that you don’t have to worry about when making or consuming this sweet treat. This brownie recipe takes the trouble out of finding the perfect dessert to make for everyone; they are great for bringing to an event while avoiding harmful ingredients or potential allergens. Simple ingredients = simple chocolate and caramel taste. Plus, there’s the added benefit of high protein in this baking mix. Chocolate Brownies with Salted Caramel Icing

Chocolate Brownies with Salted Caramel Icing

Brownies
  1. 1/2 cup organic sugar
  2. 1/4 cup oil
  3. 1 tsp. vanilla extract
  4. 1/4 cup non-dairy milk or water
  5. 1/2 cup melted chocolate chips
  6. 1 and 1/4 cup flour of choice
  7. 1/4 cup cocoa or cacao powder
  8. 1 tsp. pink salt
Icing
  1. 1 cup organic powdered sugar
  2. 1/2 cup coconut sugar
  3. Sprinkle of pink salt
  4. Around 2 tbsp. nondairy milk or water (just enough until frosting reaches desired consistency)
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit. Meanwhile, combine first four wet ingredients in a regular bowl and mix. Next add melted chocolate chips to the wet mixture and stir until just combined (a tip for quickly melting chocolate chips is to add hot water to the measuring cup with chocolate chips and let melt, then drain the water). Mix everything together, then add the dry ingredients and combine until batter forms. Add to a brownie pan lined with parchment paper, and spread the batter evenly. Bake for about 15 minutes. Once out of the oven, sprinkle on more chocolate chips and spread once they have melted to form the chocolate layer. Let brownies cool while mixing icing ingredients in a bowl. Drizzle icing on the brownies and top with pink salt. Bon appétit!

Chocolate Peppermint Brownie Cake

Looking for a quick and delicious holiday treat? This iced peppermint brownie cake is the recipe for you! It’s chocolatey, fudge-like, yet crisp on the outside. The dense and rich brownie cake is topped with a layer of melted chocolate and drizzled with cooling, peppermint icing. It is the perfect contrast of flavors with rich and decadent melted chocolate and just a touch of cool mint flavor.

It’s also a great treat for anyone with food allergies, celiac disease etc. as it is gluten-free, dairy-free, and egg-free. How could one pass up the opportunity to make such an easy, delicious, and cruelty free chocolate-peppermint brownie cake? Merry Christmas!

Chocolate Peppermint Brownies

Wet
  1. 8 tbsp. earth balance buttery spread, melted
  2. 1 tbsp. lemon juice or apple cider vinegar
  3. 4 tbsp. water or vanilla almond milk
Dry
  1. 1 cup GF all purpose flour
  2. 1 tsp. salt
  3. 1 cup organic sugar
  4. 6 tbsp. cocoa powder
  5. 1 tsp. baking soda
Melted Chocolate layer
  1. 1 cup chocolate chips
Icing
  1. 4 cups powdered sugar
  2. 2 tbsp. almond milk or enough to make preferred icing consistency
  3. 1 tsp. mint extract (or amount to taste)
  4. Sprinkle of unrefined salt
Instructions
  1. Combine 8 TBSP of melted earth balance, sugar, and cocoa powder in a medium-sized mixing bowl until just incorporated. Slowly add the dry ingredients to the bowl and mix until a smooth batter forms. Pour into a round baking pan lined with parchment paper then bake for around 20 minutes at 350 degrees fahrenheit (176 C) Check if it is finished by inserting a toothpick that should come out clean. While brownie cake is baking, assemble the mint frosting ingredients in a small mixing bowl until it it has reached desired mint flavor; set aside. When the brownie cake is finished, remove from the oven and top with chocolate chips. Let the chips melt, then spread to create a chocolate layer. Let cool for 15 minutes then drizzle with the icing. Top with optional crushed peppermint. Enjoy!

Recently I was testing out brownie batters and one of them reminded me so much of the little debbie brownies that I loved as a kid. Of course having celiac disease can put an end to many favorite childhood treats, which is why this new brownie tastes so familiar, yet is made with natural ingredients unlike packaged cakes, cookies, and brownies that contain way too many chemical ingredients. This brownie recipe is a completely nutritious version that is made with whole food ingredients. They are much tastier than the overly processed and factory-made boxed brownies that are often waxy in texture and lacking in freshness. Try these brownies for a tasty treat!

Gluten-Free Chocolate Fudge Brownies

Ingredients
  1. 1/4 cup cacao or cocoa powder
  2. 3/4 cup organic brown or white sugar
  3. 1/4 tsp. pink salt
  4. 1 tbsp. flax seed flour mixed with 3 tbsp. water
  5. 1/4 tsp. baking soda
  6. 1/2 tbsp. vanilla extract
  7. 1/2 cup applesauce or oil of choice
  8. 3/4 cup almond milk + 1 tbsp. lemon juice
  9. 1 cup GF flour (I used Bob's Red Mill gluten free)
  10. optional chocolate chips
Instructions
  1. First, combine flax and water in a cup and whisk; let sit for ten minutes, then whisk the almond milk with the lemon juice and let sit while preparing the rest of the ingredients. Combine first ingredients except for the flour and chocolate chips; add to a medium sized mixing bowl and mix well. Pour the almond milk and flax mixture into the ingredients and stir well. Lastly, add the flour and mix, then optional chocolate chips. Bake at 350 degrees for around 30 to 40 minutes or until a toothpick inserted comes out clean. Let cool and top with additional chocolate chips and salt.

Frosted Peppermint Brownie Cake

This frosted peppermint cake is a version of the Snow Covered Brownies only it’s in cake form with mint frosting instead of vanilla.   And it is all dusted with crushed peppermint for a delicious holiday treat that is rich and chocolatey with a soothing peppermint frosting.

  1. brownie recipe
Frosting
  1. 2 cups powdered sugar
  2. 1/4 cup earth balance butter
  3. 1/4 tsp. peppermint extract or 1/2 for mint lovers
Instructions
  1. Bake brownies according to recipe except leave the brownie batter uncut, and prepare frosting. After brownies have cooled, top with chilled mint frosting and crushed peppermint. *
Notes
  1. *Add candy canes or peppermints into a sealed ziplock bag and smash against a wooden cutting board or counter quite a few times until crushed.

  3. 1 tsp. sea salt or pink crystal salt

Instructions
  1. let butter melt to room temperature then mix with the sugar. Add the rest of the frosting ingredients and mix until frosting forms. Spread frosting over brownies and dust with sprinkles and additional salt.

Salted Chocolate Brownies

Sometimes you just need to randomly bake a batch of rich, gooey, chocolatey brownies, and generously sprinkle them with melted chocolate chips and sea salt–this is one of those times. :)

These luscious brownies are rich and decadent with  a fudgey texture that is soft and moist, but they still have a chewy bite.  To make them even more incredible, they are topped with a layer of melted chocolate chips and sprinkled with flecks of pink salt, which compliment their sweet flavor.  This is how brownies should taste; they are a must-try recipe!

  4. 1 tsp. pink salt

  3. 1/4 cup oil
  4. 1/4 cup non-dairy milk or water (room temp)
  5. 1/2 cup melted chocolate chips
Instructions
  1. Mix the four dry ingredients together in a medium-sized mixing bowl and set aside. Preheat oven to 350 degrees Fahrenheit then combine first four wet ingredients in a regular bowl and mix. Next add melted chocolate chips to the wet mixture and stir until just combined. Add wet to the dry ingredients and mix everything together. Add to a brownie pan and bake for about 15 minutes, until fork inserted in the middle comes up clean. Afterwords, sprinkle on more chocolate chips and top with pink salt and let cool. Bon appétit!
