Sugar Cookie Shake

This recipe is pretty much a vanilla shake and a sugar cookie in one. Soft pieces of cookie dough with crunchy sugar crystals hide within layers of the creamy vanilla shake. It is like scooping into a rich blizzard, but it’s actually good for you! It’s gluten-free, dairy-free, refined sugar free; nevertheless, it will still satisfy a sweet craving.

Sugar Cookie Dough Shake

Cookie dough Ingredients
  1. 1 cup almond meal (or almonds ground up in a food processor)
  2. sprinkle of salt
  3. 6 tbs. organic crunchy sugar
  4. 3 tbs. coconut oil or earth balance
  5. 1/2 tsp vanilla
  6. enough almond milk to turn mixture into a dough consistency
Shake Ingredients
  1. 2 very ripe bananas, frozen
  2. 1/2 cup coconut milk or almond milk
  3. 1 tsp. vanilla extract or vanilla bean
  4. 2 tbs. of maple syrup
  5. 8 cookie dough balls (plus more for the top)
Cookie Dough
  1. Add first three ingredients to a bowl and mix thoroughly. Add wet ingredients to the mix and stir, making sure to use just enough almond milk to make the mix into a dough. Roll dough into balls and chill in the fridge or freezer for 20 minutes.
Vanilla Shake
  1. Add the first five ingredients to a blender, and blend until all the ingredients are mixed together. Once blended to desired consistency, add the cookie dough balls and blend on low so that the cookie dough is slightly mixed, but doesn't disappear into the shake. Sprinkle crunchy sugar and extra cookie dough if desired.

Easter Egg Sugar Cookies

Since it is the time for all things egg-shaped, why not make a batch of egg-shaped sugar cookies for Easter.  This is a simple recipe that everyone will enjoy.  It’s especially fun to make with kids, as they can use their creativity to turn cookie dough into egg-shapes with their hands.

These sugar cookies are the perfect Easter treat. They are free of dairy, eggs, and refined sugar–yet are perfectly buttery and sweet with a delightful, vanilla aroma. They have a soft, melt-in-your mouth texture that’s delicious with just a dash of sprinkles.

Easter Egg Sugar Cookies

Ingredients
  1. 2 cups flour
  2. 1 tsp baking. soda
  3. 1 tsp. baking powder
  4. 1 cup sugar
  5. 1 cup fat/oil of choice
  6. 1 tsp. vanilla
  7. *1/2 cup or more of ginger ale
Instructions
  1. Preheat oven to 325 degrees and line two baking sheets with parchment paper. Add dry ingredients to a small bowl, whisk together, and set aside. In a large mixing bowl, cream the wet ingredients except ginger ale together. Now add enough ginger ale to form a cookie dough consistency. Mold into egg-shapes with your hands and add to cookie sheets. Bake for around ten minutes or until golden brown. Add sprinkles and cool for fifteen minutes. Enjoy!

  1. *The ginger ale adds a nice sweetness and an amazing texture to the cookies.

Dairy-free Soft-Serve Ice Cream

Nothing is quite as refreshing as a bowl of ice-cold, creamy, and delicious soft serve–especially one that’s free of dairy and refined sugar, ingredients that  overload the digestive system, and can lead to more serious problems.  Many traditional ice creams that are found at the store are also full of artificial ingredients, preservatives, and unnecessary antibiotics, but this ice cream is natural; it also provides many vitamins and minerals, along with lots of energy.  It is a simple and nutritious recipe that will leave you feeling great!

It can also be made into different textures.  Simple freeze bananas a few hours for a shake-like consistency, and about eight hours or overnight for a soft serve consistency.  

Simple Vegan Vanilla Soft-Serve

Ingredients
  1. 4 ripe bananas, frozen (freeze once brown freckles form on peels)
  2. 1 cup dairy-free vanilla ice cream (eg: So Delicious)
  3. maple syrup to taste
Instructions
  1. Put four frozen bananas into a blender or food processor.
  2. Add the vanilla ice cream and blend until mixture has turned into a smooth and creamy consistency.
  3. Pour the soft-serve into a dish and drizzle the top with maple syrup if desired. That’s it, a big bowl of creamy, delectable soft serve in only a few minutes! :)

Brain Power Smoothie Bowl

Grapes and walnuts are two of the most nutritious foods. They are incredible for the brain, which makes this dish a double, brain-power smoothie bowl.  Reminiscent of soft-serve ice cream, it has a creamy texture with a subtle and sweet grape flavor, as well as an added crunch from the walnuts.  So do your brain a favor and make this smoothie! Your memory will thank you for it. :)

Ingredients
  1. 4 medium frozen bananas
  2. 10 grapes (or however many you would like)
  3. 1/4 cup walnuts
  4. splash of almond milk (or more for a shake-like consistency)
  5. 2 tablespoons of maple syrup
Instructions
  1. Add frozen bananas, grapes, and most of the walnuts to a blender or food processor. Pour in a splash of almond milk and two tablespoons of maple syrup, then blend on medium speed until everything is fully mixed and has a creamy consistency. Garnish with more walnuts and a drizzle of maple syrup.
Notes
  1. Make sure to thaw bananas slightly before blending.
